Christmas Soup Recipe - Broccoli Chicken Soup

Broccoli Chicken Soup
 
Makes : 4 servings.
 
Ingredients :
1 (10 3/4-ounce) can condensed chicken broth
2 cups water
1 (10-ounce) package frozen chopped broccoli
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 cup (2 ounces) fine noodles
1 (5-ounce) can chunk chicken, flaked
4 large eggs
1/4 cup freshly grated Parmesan cheese
 
Directions :
1.     In medium saucepan, combine broth, water, broccoli, and seasonings.
2.     Bring to boiling over high heat. Stir in noodles.
3.     Reduce heat to medium and cook, stirring occasionally, until noodles are tender, 10 to 12 minutes.
4.     Stir in chicken. Keep hot over low heat.
5.     In large saucepan, bring 3 inches of water to boiling.
6.     Break eggs into small bowl. Reduce heat to simmering.
7.     Hold bowl close to water's surface and let eggs slide separately into water.
8.     Cook until whites are set and yolks begin to thicken but are not hard, 3 to 5 minutes.     
9.     Pour 1 cup of the soup into each of 4 bowls.
10.   Lift eggs with slotted spoon and gently lower onto soup.
11.   Sprinkle each with 1 tablespoon of the cheese.

Christmas Cookie Rceipe - Chocolate Butter Cookies

Chocolate Butter Cookies
 
Makes : 36 servings
Ingredients : 
1/2 c  Sugar
3/4 c  Butter; softened
1 Egg yolk
1 ts Almond extract
1 1/2 c  All-purpose flour
1/4 c  Unsweetened cocoa powder
Directions : 
1.     Heat oven to 375 degrees. 
2.     In large bowl combine all ingredients except flour and cocoa. 
3.     Beat at medium speed until light and fluffy (2-3 min.).
4.     Gradually add flour and cocoa until well mixed (2-3 min.).
5.     Shape rounded teaspoonfuls as desired (1" balls, 2"-3" logs, blls flattened, balls with
   indentations, etc.) or use cookie press.
6.     Place 1" apart on cookie sheets.
7.     Bake for 7-9 minutes or until set. Cool.
8.     Decorate with melted chocolate chips, melted almond bark, nuts, colored sugars, candied fruit, candies, maraschino cherries, etc.

Christmas Cheeseburger Recipe

Grilled Stuffed Cheeseburger
 
Makes : 4 sandwiches
 
Ingredients :
1 (3-ounce) package cream cheese, softened
1 (2 1/2-ounce) jar sliced mushrooms, drained
2 tablespoons chopped green bell pepper
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds lean ground beef
4 ounces Cheddar Cheese, cut into 16 (2x1-inch) slices
4 Kaiser rolls, cut in half
 
Directions  :
1.   Heat gas grill on medium or charcoal grill until coals are ash white.
2.   Meanwhile, combine cream cheese, mushrooms, green pepper, garlic salt and pepper in small bowl.
3.   Shape ground beef into 8 large (1/2-inch thick) patties.
4.   Place about 2 tablespoons cream cheese mixture on top of 4 patties.
5.   Top each with 1 meat patty; press around edges to seal.
6.   Place patties on grill. Grill, turning once, until desired doneness (12 to 15 minutes).
7.   Top each burger with 4 slices Cheddar cheese; continue grilling until cheese is melted (1 minute).
8.   Serve burgers on rolls.

Christmas Recipe - Apple Pie Pancake

Apple Pie Pancake

Makes : 4 to 6 servings.

Ingredients :
Filling:
3 to 4 tart green apples, peeled and thinly sliced
3/4 cup granulated sugar
1 tablespoon ground cinnamon
1/2 to 1 teaspoon ground cloves

1/4 teaspoon ground nutmeg
1/4 cup butter
 
Batter:
5 large eggs
1/2 cup all-purpose flour
1 tablespoon granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 tablespoons melted butter
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
, freshly grated
Maple syrup for accompaniment
Slightly sweetened whipped cream or sour cream for accompaniment.
Directions :
1.      Preheat oven to 425*F (220*C).
2.      Combine apples, suger, cinnamon, cloves and nutmeg in a saucepan.
3.      Cook for about 15 minutes or until apples are tender.
4.      Melt 1/4 cup butter in the oven in a 9-round cake pan .
5.      Remove pan from oven and carefully swirl melted butter to coat all sides.
6.      Pour in the apple mixture.
7.      Beat the eggs, flour, sugar, baking powder, salt, milk, 2 tablespoons melted butter,
          vanilla and nutmeg until well mixed.
8.      Pour egg mixture over the apples bake for 15 minutes at 425*F (220*C);
9.      Reduce heat to 350*F (175*C) and cook an additional 10 to 15 minutes or until golden
          brown on top.
10.   Serve immediately.
11.    Slice and serve with maple syrup and a dollop of whipped cream or sour cream, if
          desired.

Christmas Recipe - Chese Ball with Pecans

Cheese Ball with Pecans
 
Ingredients :
4 cups (16 ounces) shredded Cheddar cheese
1 cup chopped pecans
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/8 teaspoon black pepper
1/8 teaspoon ground cayenne pepper
1/2 cup chopped pecans
 
Directions :
1.   Combine first cheese, pecans, mayonnaise, chopped onion, pepper, and cayenne pepper in a large mixing bowl.
2.   Beat at low speed of an electric mixer until well blended.
3.   Shape mixture into a ball and roll in 1/2 cup chopped pecans.
4.   Chill for about 2 hours.
5.   Serve with assorted crackers.
6.   Makes one cheese ball, about 5 inches in diameter.

Ingredients :
1 cup all-purpose flour
2 cups granulated sugar
1/8 teaspoon salt
1 cup butter
3 squares baking chocolate
3 large eggs
1 teaspoon vanilla extract
3 tablespoons sour cream
2 cups semisweet chocolate chips

1.   Preheat oven to 350*F.
2.   Mix together flour, sugar, and salt; set aside.
3.   Melt butter with baking chocolate.
4.   Add to the flour mixture and stir well.
5.   Beat eggs until foamy.
6.   Stir the eggs, vanilla, sour cream, and chocolate chips into the batter.
7.   Pour into an oiled 13 x 9-inch baking dish and bake for 30 minutes.

Christmas Beverage Recipe - Peppermint Cooler

Peppermint Christmas Cooler

Makes : 4 (3/4-cup) servings.

Ingredients :
1 1/2 cups vanilla ice cream
1 1/2 cups milk
6 small peppermint candy canes, broken into pieces
Ice cubes
Small candy canes for garnish.
Directions :
1.   Process first 3 ingredients in an electric blender  until smooth.
2.   Add 3 to 6 ice cubes and process until smooth.
3.   Serve immediately, garnished with another candy cane.

Christmas Stew Recipe - Cranberry Chicken Stew

Cranberry Chicken Stew

Makes : 4 servings

Ingredients :
4 chicken legs, thighs attached
Salt and freshly ground black pepper
1 cup all-purpose flour
1/2 cup canola oil
1 medium onion, cut in half and sliced 1/4-inch thick
2 carrots, peeled and sliced 1/4-inch thick
2 celery stalks, sliced 1/4-inch thick
1 1/2 pounds red bliss potatoes, washed and quartered
1 tablespoon chopped garlic
1 cup Ocean Spray® Fresh or Frozen Cranberries
1 1/2 cups Ocean Spray® Cranberry Juice Cocktail
1 1/2 cups dry red wine
1/2 cup granulated sugar
1/2 cinnamon stick

Directions :
1. Preheat oven to 325 degrees F. and an ovenproof skillet over medium heat.
2. Season the chicken with salt and pepper on both sides, and thoroughly dredge in flour.
3. Pour the canola oil in the preheated pan and sear the chicken legs on both sides until golden brown, about 3 minutes per side.
4. Set the chicken aside and carefully pour off all but 1 tablespoon of the remaining oil.
5. Return the skillet to the heat and add the onion, carrot, celery, potato, garlic and cranberries. Cook for 3 minutes.
6. Add the cranberry juice cocktail, red wine, sugar, cinnamon stick and chicken legs to the pan and bring to a simmer.
7. Check for seasoning and add more salt if needed.
8. Remove from the stove and make sure the chicken legs are submerged in the liquid. 9. Cover tightly with lid or foil and bake in the oven for 1 1/2 hours.
10. Remove from the oven and let rest covered for at least 15 minutes.
11. Serve the chicken legs in bowls with the vegetables and broth.

Christmas Appetizer Recipe - Cranberry Ambrosia-Cream Cheese Spread

Cranberry Ambrosia-Cream Cheese Spread
 
Makes : 24 appetizer servings.
 
Ingredients :
2 (8-ounce) packages cream cheese, softened
1/4 cup powdered sugar
1 (6-ounce) package sweetened dried cranberries, divided use
1 (15 1/2-ounce) can crushed pineapple, drained well
1 (11-ounce) can mandarin oranges, drained well
1 (3 1/2-ounce) can shredded coconut, divided use
1 cup chopped pecans, toasted
Pecan halves, toasted
Ginger snaps as accompaniment
 
Directions :
1.   Stir together cream cheese and sugar until blended.
2.   Add dried cranberries, reserving 1/4 cup cranberries.
3.   Drain pineapple and oranges; pat dry between layers of paper towels. Set oranges aside.
4.   Stir pineapple and coconut into cream cheese mixture, reserving 1/4 cup coconut.
5.   Stir in chopped pecans. Spoon mixture into a serving bowl.
6.   Sprinkle reserved dried cranberries around edges of bowl.
7.   Arrange orange segments around inside edge of cranberries.
8.   Sprinkle reserved 1/4 cup coconut in center, and top with pecan halves.
9.   Serve with gingersnaps.

Christmas Recipe - Curled-Up Candy Cookies

CURLED-UP CANDY COOKIES
 
Ingredients :
¾ cup unblanched almonds, grated or ground fine
½ cup butter
½ cup sugar
1 tablespoon each of flour, heavy cream, & milk

Directions :
1.   Put it all in a saucepan over low heat and stir it till the butter melts.
2.   Then whisk it a bit till its smooth, and drop the batter by the teaspoonful onto a well-oiled and floured cookie sheet ~ only three per sheet, because they spread like mad and, also, you have to roll each one while it's malleable, and they cool fast.
3.   Bake at 350 degrees F. about eight minutes till the centers bubble a little and they're deep gold.
4.   Take them out, let them cool for a few seconds, and then quickly roll each one around a broom handle or a wooden spoon handle.
5.   Re-oil and flour the cookie sheet each time.

Christmas Recipe - Plum Pudding

Christmas Plum Pudding

Makes 1 pudding for 8 or 9 persons

Ingredients :
8 oz chopped suet or modern day equivalent
8 oz breadcrumbs
2 oz of plain flour
8 oz raisins
8 oz sultanas
4 oz currants
4 oz candied peel - Cut your own or use ready cut
half a grated nutmeg
half an ounce of mixed spice
half an ounce of ground cinnamon
1 gill of milk (about a quarter pint of milk
1 wineglassful of rum or brandy (optional)
2 oz desiccated coconut or shredded almonds
1  lemon
4 eggs  pinch of salt

Directions :
1.     Skin the suet or chop it finely.
2.     Clean the fruit,  stone the raisins, finely shred the mixed peel; peel and chop the
        lemon rind.
3.     Put all the dry ingredients in a basin and mix well.
4.     Add the milk, stir in the eggs one at a time, add the rum or brandy and the
        strained juice of a lemon.
5.     Work the whole thoroughly for some minutes, so that the ingredients are all
        well blended.
6.     Put the mixture in a well greased or floured pudding cloth.
7.     Boil the plum pudding for 4 hours or steam for at least 5 hours. 

Note :
This recipe has no baking powder or sugar mentioned.
1 gill is a quarter pint or 5 fl oz or 150ml.

Christmas Cookie Recipe - Oatmeal Cookie

Low Fat Oatmeal Cookie Recipe

Ingredients :
1 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 tb Shortening
1/4 c Applesauce
1/2 c Sugar
1/2 c Brown sugar
1 Egg; or 1/4 cup substitute
1 ts Vanilla
1 1/3 c Oats
1/2 c Raisins; optional
 
Directions :
1.   Preheat oven to 375. Lightly spray cookie sheet with Pam.
2.   In large bowl, mix flour, baking powder, baking soda and salt.
3.   In a separate bowl, whisk together shortening, applesauce, sugars, egg and vanilla until shortening breaks into pea sized pieces.
4.   Add flour mixture to applesauce mixture. Mix well. Fold in oats and raisins.
5.   Drop rounded tsp onto cookie sheet 2" apart.
6.   Bake for 10 to 12 minutes.
7.   Remove cookies from oven and cool on the pan for 5 minutes.

Christmas Champagne Cocktail Recipe

Ingredients :
1 lemon wedge
1/4 cup pink decorating sugar
1 sugar cube
1 dash of pomegranate nectar
Chilled champagne, or other sparkling wine or sparkling cider

Directions :
1.   Rub the rim of a champagne flute with the lemon wedge
2.   Dip the rim into the decorating sugar.
3.   Put the sugar cube into the flute.
4.   Drop the pomegranate nectar on the sugar.
5.    Pour in the sparkling wine or cider to fill the glass.

Christmas Recipe - Eggnog Loaf

Christmas Eggnog Loaf Recipe

Preparation Time : 2 hrs

Serves/Makes:   8

Ingredients :
2 eggs
1 cup white sugar
1 cup eggnog
1/2 cup butter
2 teaspoons rum extract
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon ground nutmeg

Directions :
1.     Preheat oven to 350ºF. Grease the bottom only of 9x5 inch loaf pan.
2.     Beat the eggs in large bowl and add the sugar, eggnog, butter, rum extract and vanilla; blend well.
3.     Spoon flour into a measuring cup and level it off.
4.     Add the flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.
5.     Bake for 40 minutes to 1 hour or until tooth pick inserted in center comes out clean. 6.     Cool for about 10 minutes before you remove from pan.
7.     Cool completely and wrap tightly.
8.     Store in the refrigerator.

Christmas Recipe - Almond Butter Christmas Cake

Almond Butter Christmas Cake

Preparation Time : 2 hrs

Serves/Makes :   12

Ingredients :
3 cups cake flour, sifted
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter or shortening
1 1/2 cup sugar
3 eggs, unbeaten
1/2 cup almonds, finely chopped
1/2 cup raisins, finely chopped
1 cup milk
1 teaspoon vanilla
***Boiled Frosting***
1 1/2 cup granulated sugar
1/4 teaspoon cream of tartar
2/3 cup boiling water
2 egg whiles
1 teaspoon vanilla
 
Directions:
1.     Sift flour once, measure, add baking powder and salt, and sift together three times.
2.     Cream butter thoroughly. add sugar gradually, and cream together until light and fluffy.
3.     Add eggs, one at a time, beating thoroughly after each. Add nuts and raisins and beat well.
4.     Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla.
5.     Bake in two greased 9- inch layer pans in moderate oven (375ºF.) 25 minutes, or until done.
6.     Spread Boiled Frosting between layers and on top and sides of cake.
7.     Decorate top of cake with wreath of holly, using pieces of maraschino cherries or red cinnamon candies for berries, and slices of angelica or citron for leaves and stems Or
8.     Decorate with poinsettias made of candied cherries. Slice cherries in rings, cut rings in half, and arrange to form petals of poinsettias.
 
For Frosting :
1.     Combine granulated sugar and cream of tartar in saucepan.
2.     Add boiling water and stir until sugar is dissolved.
3.     Place saucepan over heat and bring mixture to a boil.
4.     Boil rapidly, without stirring, for about 10 minutes or until syrup forms a soft ball in cold water, or until candy thermometer indicates 240 degrees.
5.     Remove from heat while testing.
6.     Beat egg whites until stiff. Pour hot syrup in fine stream over egg whites, beating constantly with electric mixer until frosting is cool and of proper spreading consistency.
7.     Stir in vanilla.

Christmas Recipe - Orange Bread Pudding

ORANGE BREAKFAST BREAD PUDDING

Ingredients :
3 cups of whole milk
3 cups whipping cream
1 1/2 cups  sugar
3 eggs plus 11 egg yolks
1 tblsp vanilla
1 1/2 lb white bread (french-toasted and buttered)
10 oranges peeled and sectioned
Cinnamon

Directions :
1.     Preheat oven to 325 F.
2.     Scald milk and cream.  In a separate bowl whisk sugar, eggs, yolks. 
3.     Add cream mixture and whisk vigorously. 
4.     Stir in vanilla.  Strain into a bowl.

To assemble:
5.     Layer toased bread, orange sections and cinnamon in 7 or 8 individual
         2 cup bowls or charlotte molds. 
6.     Place in a bain-marie (water bath) filled with hot water about halfway up the pudding
         dishes. 
7.     Bake 30-40 minutes until the custard is firm. 
8.      Remove from the water bath. 
9.      Refrigerate to store. 
10.   Reheat in bowls in a 300 degree oven for serving. 
11.    Turn out of molds onto serving plates and serve.

Christmas Recipe - Bruch Casserole

Christmas Brunch Casserole Recipe
 
Serves/Makes:   10

Ingredients :
1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cup milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Directions :
1.     Preheat oven to 400 degrees F.
2.     Grease a 9x13 inch casserole dish.
3.     Place bacon in a large, deep skillet.
4.     Cook over medium high heat until evenly brown.
5.     Drain and set aside.
6.     In a separate skillet, melt the butter and fry onions and mushrooms until tender.
7.     Place potatoes in bottom of prepared dish.
8.     Sprinkle with salt, garlic salt, and pepper.
9.     Top with bacon, then onions and mushrooms.
10.   In a large bowl, beat eggs with milk and parsley.
11.   Pour over casserole. Top with grated cheese.
12.   Cover and refrigerate overnight.
13.   Bake in preheated oven for 1 hr or until set.
14.   If preparing and baking the same day, cook for 45 minutes

Christmas Recipe - Rum Balls

HOLIDAY RUM BALLS

Serving Size  : 24   

Ingredients :
1c       Confectioners sugar
2tb      Cocoa
2 1/2c Crushed vanilla wafers
1c       Finely chopped pecans
2ts      Vanilla
3tb      Light corn syrup
3tb      Rum
1/4ts   Almond extract
 
Directions : 
1.   Sift cocoa and confectioners sugar together and combine with cookie crumbs and pecans.
2.   Add corn syrup, rum and flavorings.
3.   Roll into 1" balls, and then roll in granulated sugar.
4.   Store in a tightly sealed container in the refrigerator.

Christmas Pudding Recipe : Plum Pudding

Christmas Plum Pudding

Preparation Time : 5 to 6 hours.
Makes For : 8 or 9 persons.

Ingredients :
8 oz moist sugar (use soft brown )
8 oz chopped suet or modern day equivalent
8 oz sultanas cleaned
8 oz raisins halved and stoned
4 oz currants washed and dried
4 oz shredded mixed candied peel - Cut your own or use ready cut
4 oz of plain flour
4 oz breadcrumbs
2 oz almonds blanched and shredded
the grated rind of a 1 lemon
3 eggs
a salt spoonful of  nutmeg grated
half a teaspoon of salt
quarter pint of milk
1 small wineglassful of brandy (optional)

Directions :
1.     Mix all the dry ingredients together, stir in the well beaten eggs, milk and brandy (if used).
2.     Turn the mixture into 2 well greased basins, and steam from 5 to 6 hours.

Please note that no raising agent is mentioned in this recipe, but the flour must be plain flour, as elsewhere self raising flour is mentioned by type when used.

Christmas Stuffing - Corn Bread Stuffing

CORN BREAD STUFFING

Makes : 12 servings
Ingredients : 
2 pk Corn bread mix (10 oz)
1/2 c  Celery,chopped
1    Onion,medium,minced
1/2 c  Butter
2    Egg yolks
Salt
Pepper
Directions :
1.     Prepare corn bread, following label directions, or use your own favorite recipe. 
2.     Crumble enough to make 7 cups and transfer to a large mixing bowl.
3.     Saute celery and onion in butter in a large skillet until soft.
4.     Spoon vegetables and butter over corn bread crumbs.
5.     Beat egg yolks in a medium-sized bowl;
6.     Stir in stock and pour mixture over corn bread. Stir lightly to blend.
7.     Season with salt and pepper to taste.

Christmas Pie Recipe - Sugar-Crusted Apple Pie

Sugar-Crusted Apple Pie

Delectable old-fashioned pie generously filled with juicy, cinnamon-flavored apple  slices.
 
Makes : 2 pies (8 servings each).

 

Pastry Ingredients:
4 cups all-purpose flour
1 teaspoon salt
1 cup cold Butter
1 cup shortening
1/2 cup cold water
1 large egg, beaten
1 teaspoon apple cider vinegar or white vinegar

Filling Ingredients:
12 cups (4 pounds) tart cooking apples, peeled, cored, sliced 1/4-inch
2 1/4 cups granulated sugar
2 tablespoons all-purpose flour
3 teaspoons ground cinnamon
6 tablespoons Butter, cut into pieces.
Directions :
1.     Combine 4 cups flour and salt in large bowl;
2.     Cut in 1 cup butter and shortening until mixture resembles coarse crumbs.
3.     Combine cold water, egg and vinegar in small bowl.
4.     Add egg mixture to flour mixture; mix with fork just until flour is moistened.
5.     Divide dough into fourths; shape each fourth into a ball; flatten slightly.
6.     Wrap each ball of dough in plastic food wrap; refrigerate at least 1 hour.
7.     Roll out 1 ball of dough on lightly floured surface into 12-inch circle. Fold into quarters.
8.     Place dough into 9-inch pie pan; unfold, pressing firmly against bottom and sides.
9.     Trim crust to 1/2 inch from edge of pan. Set aside.
10.   Heat oven to 350°F.
11.   Combine 6 cups apples, 1 cup sugar, 1 tablespoon flour and 1 1/2 teaspoons cinnamon in large bowl; toss to coat.
12.   Spoon apple mixture into prepared crust. Dot apple mixture with 3 tablespoons butter.
13.   Roll out second ball of dough on lightly floured surface into 12-inch circle. Fold into quarters.
14.   Place dough over filling; unfold. Trim, seal and crimp or flute edge.
15.   Cut 5 or 6 large slits in top crust. Sprinkle top of crust evenly with 2 tablespoons sugar.
16.   Cover edge of crust with 2-inch strip of aluminum foil.
17.   Bake for 45 minutes; remove aluminum foil.
18.   Continue baking for 10 to 20 minutes or until crust is lightly browned and juice begins to bubble through slits in crust.
19.   Let pie stand 20 to 30 minutes before cutting.
20.   While first pie bakes, repeat rolling and filling process to make a second pie.
21.   Seal in resealable plastic freezer bag. Freeze for up to 3 months.
22.   To bake, thaw frozen pie while oven preheats, then bake as directed above.

Christmas Recipe - Baked Ham Recipe

Baked Ham Recipe

Makes / Servings : 16-20
 
Ingredients :
1 5- to 6-pound fully cooked ham (rump half or shank portion)
24 whole cloves
2 t finely shredded orange peel
1 Cup orange juice
1/2 cup packed brown sugar
4 t cornstarch
1 1/2 t dry mustard
 
Directions :
1.     Score ham by making diagonal cuts in a diamond pattern.
2.     Stud with cloves (push the long end of the cloves into the ham).
3.     Place on a rack in the oven, in a shallow roasting pan.
4.     Add a little water to the bottom of the pan to keep the pan from warping.
5.     Bake in a 325° oven till thermometer reads 125°.
6.     For a rum, that'll be about 1 1/4 to 1 1/2 hours; for a shank, that's about 1 3/4 to 2 hours.
 
Ham Glaze Recipe :
7.     Combine orange peel and juice, brown sugar, cornstarch, and dry mustard in a medium saucepan.
8.     Cook and stir over medium heat until thickened and bubbly.
9.     Cook and stir 2 minutes more.
 
Final Preparation :
10.     Brush ham with some of the glaze.
11.     Bake 20 to 30 minutes more or till thermometer reads 135°.
12.     Let stand 15 minutes before carving. (The meat's temperature will rise 5° while standing.)
13.     Serve with remaining glaze.

Coconut Macaroons
 
Ingredients :
250g desiccated coconut
250g sugar
1 teaspoon cornflour
5 egg whites
Grated rind of one lemon
Directions :
1.   Wash the lemon, then grate the rind.
2.   Whisk egg whites till very stiff.
3.   Add sugar and whisk again till stiff.
4.   Then fold in coconut, cornflour and rind.
5.   Place in spoonfuls on a flour-dusted baking tray and cook in a slow oven for 20 minutes.

3/4 cup butter flavored shortening
1 1/4 cups brown sugar
1 egg
1/3 cup milk
1 1/2 teaspoons vanilla

1/4 teaspoon cinnamon
1 cup raisins
1 cup walnuts chopped
 
Directions :
1.   Lightly grease cookie sheet with shortening.
2.   Combine shortening, brown sugar, egg, milk, and vanilla;
3.   Beat with mixer on high speed to blend well.
4.   Combine oats, flour, baking soda, salt and cinnamon;
5.   Add to shorteing mixture and combine until just blended.
6.   Stir in raisins and nuts.
7.   Drop by rounded tablespoonfuls onto cookie sheet, 2 inches apart.
8.   Bake at 375 for 10-13 min., or until lightly browned.

Christmas Side Dish Recipe - Buttermilk Mashed Sweet Potatoes

Buttermilk Mashed Sweet Potatoes

Makes : 8 servings
 
Ingredients :
2 pounds sweet potatoes (about 6 medium)
1/2 teaspoon grated orange zest
3/4 cup buttermilk, room temperature or slightly warmed
3 tablespoons butter, room temperature
1 tablespoon packed brown sugar
Salt and pepper to taste
 
Directions :
1.   Peel sweet potatoes and cut into chunks.
2.   Steam over boiling water until tender, 20 to 25 minutes. (Or, pierce unpeeled potatoes with fork and microwave on high (100% power) 12 to 14 minutes, turning over halfway through, let cool and peel.)
3.   Transfer sweet potatoes to mixing bowl and mash, blending in orange zest, buttermilk, butter and brown sugar.
4.   Transfer to serving dish. Can be made ahead, refrigerated and reheated in microwave.
5.   Variation: Substitute lemon zest for orange zest. Add ground cinnamon or nutmeg to taste.

Holiday Cheese Truffles

Makes: 24 servings, 2 truffles and 5 crackers each
Ingredients :
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
1 tsp. garlic powder
Dash ground red pepper
1/4 cup chopped roasted red pepper s
1/4 cup chopped green onion s
1-2/3 cups PLANTERS Chopped Pecans
SOCIABLES Savory Crackers
Directions :

1.   BEAT cream cheese, shredded cheese, garlic powder and ground red pepper until well blended. Divide in half.

2.   Add roasted red peppers to one half and green onions to the other half; mix each half until well blended. Cover.

3.   REFRIGERATE several hours or until chilled.

4.   SHAPE each cheese mixture into 24 balls, each about 1 inch in diameter. Roll in pecans. Cover and refrigerate until ready to serve.

Christmas Cheese Scones from New Zealand
 
Ingredients :
2 cups flour
2 teaspoons baking powder
2 oz butter
1/2 teaspoon salt, pinch of cayenne pepper
3 oz. grated cheese
milk to mix to a fairly firm dough

Directions :
1.   Mix together flour, baking powder, salt and pepper
2.   Cut in the butter: add milk and mix just enough to incorporate.
3.   On a floured board, roll our to 1/2 inch thick.
4.   Cut into rounds and place on greased cookie sheet.
5.   Brush tops with milk and sprinkle with some more grated cheese.
6.   Cook at 400 farenheit for 10 minutes.

Ingredients :
1 1/2 cups flour
1 teaspoon baking powder

Christmas Recipe - Mexican Cookies

Mexican Christmas Cookies

Serving : Makes 4 dozen cookies.

Ingredients :
1/2 c. sugar
1 cup butter or margarine, softened
Confectioner's sugar
1 tsp. vanilla
1/4 tsp. salt
2 cup flour

Directions :
1.   In medium bowl cream butter, sugar, vanilla and salt until fluffy.
2.   Stir in flour until well blended. Chill 30 minutes or until firm enough to handle.
3.   Shape into 1 inch balls. Place 1 inch apart on ungreased cookie sheet.
4.   Bake in 375 degree oven 12 to 15 minutes or until light golden in color.
5.   Remove to rack (close together) and while still warm, dust heavily with confectioner's sugar; cool.
6.   Store airtight in cool, dry place.
7.   Before serving, dust cookies with additional confectioner's sugar.

Honey Basted Turkey Breast

Ingredients :
1 (6-pound) turkey breast
1/2 cup vegetable oil
1/2 cup soy sauce
2 tablespoons honey
1 1/2 teaspoons ground ginger
1 1/2 teaspoons dry mustard
2 garlic cloves, crushed
Directions :
1.   Cut a turkey into serving pieces.
2.   In a small bowl combine together oil, soy sauce, honey, ginger, dry mustard, and crushed garlic cloves.
3.   Marinate the turkey for 2 hours in the refrigerator. Drain, reserving the marinade.
4.   Grill 6 to 8-inch above medium-hot coals for 30 minutes, or until done, turning occasionally.
5.   Baste with the marinade while grilling.

Christmas Cake Recipe - Cheese Cake

Christmas Cheese Cake

Ingredients :
2 packages lady fingers
3 (8 ounce) packages cream cheese
1 cup white sugar
4 eggs
1 1/2 pints sour cream
1 tablespoon vanilla extract
1 tablespoon almond extract
1 (20 ounce) can cherry pie filling or other flavor

Directions :
1.     Preheat oven to 375 degrees F (190 degrees C).
2.     Line the sides of one 10 inch springform pan with lady fingers then line the bottom
        with lady fingers (cutting lady fingers, if necessary).
3.     Cream the cream cheese and sugar together.
4.     Add the eggs, one at a time, beating after each addition.
5.     Stir in the extracts and fold in the sour cream.
6.     Pour batter into the prepared pan.
7.     Cover tops of lady fingers with foil.
8.     Bake at 375 degrees F (190 degrees C) for 50 to 60 minutes, until almost set in the
        middle.
9.     Remove cake from oven and let stand for 1/2 hour, then remove sides of pan.
10.   Place in the refrigerator for at least 24 hours.
11.   Before serving top with canned pie filling.

Christmas Drink Recipe - Sangria

Sangria

Originating in Spain, this wine and fruit drink grew in popularity after being served in the Spanish Pavilion at the 1964 New York World's Fair.

Makes about 2 quarts or 10 6-ounce servings.
Preparation time : 20 minutes.
Chilling time : 1 hour.
 
Ingredients :
2 bottles (750 ml. each) dry red wine (with or without alcohol, chilled)
2 cups fresh orange juice (chilled)
1/4 cup superfine sugar
4 large peaches (2 pounds, peeled and thinly sliced)
2 medium-size, unpeeled oranges (thinly sliced)
1 large unpeeled lemon (thinly sliced)
1 cup club soda (chilled)
2 tablespoons Spanish brandy (optional)
 
Directions :
1.   In a large pitcher, stir together the wine, juice, sugar, peaches, oranges, and lemon.
2.   Cover and refrigerate for at least 1 hour or overnight.
3.   To serve, stir in the club soda, plus the brandy if you wish.
4.   Pour into tall glasses filled with ice.

Christmas Soup Recipe - Spiced Carrot & Orange Soup

SPICED CARROT AND ORANGE SOUP

Makes : 8 to 10 servings

A warming soup with the cheering color of carrots and the zesty flavor of citrus.
Ingredients :
2 pounds carrots, thinly sliced
2 tablespoons unrefined peanut oil or other fragrant nut oil
2 cups chopped onions
2 large celery stalks, diced
4 cups water
1 ½ cups fresh orange juice
1/4 cup dry white wine
1 teaspoon each: ground cumin, coriander, ginger
½ teaspoon ground nutmeg
1 cup soymilk, or as needed
salt and freshly ground pepper to taste
3 tablespoons minced fresh parsley
3 tablespoons finely minced scallion

Method :
1.     Reserve and set aside about ½ pound of the carrots.
2.     Heat the oil in a large soup pot.
3.     Add the onions and celery and sautee over moderate heat, stirring frequently, until golden.
4.     Add the carrots (except for the reserved batch), water, juice, wine, and spices.
5.     Bring to a boil, then cover and simmer over moderate heat until the vegetables are quite tender, about 30 minutes.
6.     Transfer in batches to the container of a food processor or blender and puree until quite smooth.
7.     Return to low heat and stir in enough soymilk to give the soup a medium-thick consistency.
8.     Season to taste with salt and pepper. Let the soup stand off the heat for several hours before serving.
9.     Just before serving, steam the reserved carrots until crisp-tender and stir into the soup along with the parsley and scallion.
10.   Taste to correct consistency and seasonings before serving.

Christmas Dessert Recipe - Cream Cheese Apple Tart

Cream Cheese Apple Tart

Ingredients :

CRUST:
1 cup (140 grams) all-purpose flour
1/3 cup (35 grams) confectioners (powdered or icing) sugar 
1/2 cup (1 stick) (113 grams) cold unsalted butter, cut into small pieces

FILLING:
One 8-ounce (227 grams) cream cheese, at room temperature
1/4 cup (50 grams) granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract

TOPPING:
1/4 cup (50 grams) granulated white sugar
1/2 teaspoon (2 grams) ground cinnamon
4 cups (500 ml) Granny Smith apples, peeled and cut into 1/4 inch (.6 cm) slices (about 3-4 large apples)
1/3 cup (35 grams) sliced almonds
 
Method :

1.   Preheat oven to 450 degrees F (230 degrees C) and place rack in center of oven. 
2.   Grease (or spray with Pam) a 9 inch (22 cm) springform pan.

CRUST: 
1.   In the bowl of your food processor place the flour and sugar. 
2.   Pulse to blend together. 
3.   Add butter and pulse until dough just begins to come together. 
4.   Pat the dough onto the bottom and one inch (2.5 cm) up the sides of the pan. 
5.   Cover with plastic wrap and place in refrigerator while you make the filling.

FILLING: 
1.   In a food processor process the cream cheese until smooth. 
2.   Add the sugar and mix well. 
3.   Blend in the egg and vanilla extract and process until smooth. 
4.   Remove the crust from the fridge and pour in the filling. 
5.   Return to refrigerator while you prepare the topping.

TOPPING: 
1.   Combine the sugar and cinnamon in a large bowl. 
2.   Toss the sliced apples in the sugar mixture. 
3.   Spoon the apples evenly over the cream cheese layer and sprinkle with almonds. 
4.   Place the springform pan on a larger baking sheet to catch the drips. 

1.   Bake at 450 degrees F (230 degrees C) for 10 minutes. 
2.   Reduce heat to 400 degrees F (205 degrees C) and bake for 25 to 30 minutes until golden brown (apples are soft when pierced with a fork), and filling is almost set.  
3.   Remove from oven and place on wire rack to cool. 
4.   Sprinkle with confectioners sugar and serve at room temperature. 
5.   Leftovers can be covered with plastic wrap and refrigerated.

Tip : This is one dessert that should be eaten shortly after it is baked; when the crust is at its best, beautifully crisp and crumbly, the filling is soft and creamy, and the apples are juicy and flavorful.

Christmas Recipe - Choclate Fudge

Chocolate Fudge

Serves / Makes : 4 pounds
 
Ingredients :
3cups Semisweet chocolate pieces
2cups chopped nuts
1tablespoon vanilla
1/2pound butter
41/2cups sugar
1(13oz.)can evaporated milk
salt
 
Method :
1.     Combine sugar,milk, and dash salt in a large saucepan.
2.     Boil over medium heat for 14 minutes, timing after mixture comes to full boil.
3.     Stir occacionally.
4.     While syrup is cooking, place butter, chocolate pieces, and a dash of salt in large mixing
         bowl.
5.     After syrup is cooked, pour over the chocolate butter mixture in bowl and blend at low
         speed first, then at high speed for 10 min.
6.     Add nuts and vanilla and stir to blend.
7.     Pour fudge into greased 13x9" pan.
8.     Chill untill firm.

Ingredients :
1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cup milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Method :
1. Preheat oven to 400 degrees F.
2. Grease a 9x13 inch casserole dish.
3. Place bacon in a large, deep skillet.
4. Cook over medium high heat until evenly brown. Drain and set aside.
5. In a separate skillet, melt the butter and fry onions and mushrooms until tender.
6. Place potatoes in bottom of prepared dish.
7. Sprinkle with salt, garlic salt, and pepper.
8. Top with bacon, then onions and mushrooms.
9. In a large bowl, beat eggs with milk and parsley. Pour over casserole.
10. Top with grated cheese. Cover and refrigerate overnight.
11. Bake in preheated oven for 1 hr or until set.
12. If preparing and baking the same day, cook for 45 minutes.

6 small tart apples

1 tablespoon packed brown sugar
1 quart apple cider
1/4 teaspoon freshly ground nutmeg

1/4 cup granulated sugar
2 cups dry sherry
4 thin lemon slices

Method :
1. Preheat oven to 350° F.
2. Grease a 10 x 6 x 1 1/2-inch baking pan.
3. Core and halve apples, arrange (cut side up) in pan.
4. Sprinkle with brown sugar and bake in preheated oven for 20 minutes or until tender. Set aside.
5. Just before serving, pour cider in saucepan and heat to just below boiling point.

6. Stir in remaining ingredients over low heat until sugar is dissolved.
7. Remove lemon slices. Pour mixture into punch bowl.
8. Garnish with apple halves.

Christmas Breakfast Recipe

Christmas Breakfast Omelet

Serves : 8

Ingredients :
10 slices of bread
1/2 pound cheddar cheese, grated
1 pound bacon, cooked
6 eggs
3 cups milk
1/2 teaspoon salt

Method :
1. Make the Night Before Trim crust off bread, cube and put into ungreased 9 x 12 baking dish.

2. Cover bread with grated cheese.
3. Put a layer of crumbled bacon over cheese.
4. In large bowl beat eggs, add milk and salt.
5. Pour milk mixture over bread, cheese and bacon.
6. Let stand in fridge over night.
7. Bake 45 mins at 350 degrees.
