Christmas Pudding Recipe : Plum Pudding

Christmas Plum Pudding

Preparation Time : 5 to 6 hours.
Makes For : 8 or 9 persons.

Ingredients :
8 oz moist sugar (use soft brown )
8 oz chopped suet or modern day equivalent
8 oz sultanas cleaned
8 oz raisins halved and stoned
4 oz currants washed and dried
4 oz shredded mixed candied peel - Cut your own or use ready cut
4 oz of plain flour
4 oz breadcrumbs
2 oz almonds blanched and shredded
the grated rind of a 1 lemon
3 eggs
a salt spoonful of  nutmeg grated
half a teaspoon of salt
quarter pint of milk
1 small wineglassful of brandy (optional)

Directions :
1.     Mix all the dry ingredients together, stir in the well beaten eggs, milk and brandy (if used).
2.     Turn the mixture into 2 well greased basins, and steam from 5 to 6 hours.

Please note that no raising agent is mentioned in this recipe, but the flour must be plain flour, as elsewhere self raising flour is mentioned by type when used.

Christmas Stuffing - Corn Bread Stuffing

CORN BREAD STUFFING

Makes : 12 servings
Ingredients : 
2 pk Corn bread mix (10 oz)
1/2 c  Celery,chopped
1    Onion,medium,minced
1/2 c  Butter
2    Egg yolks
Salt
Pepper
Directions :
1.     Prepare corn bread, following label directions, or use your own favorite recipe. 
2.     Crumble enough to make 7 cups and transfer to a large mixing bowl.
3.     Saute celery and onion in butter in a large skillet until soft.
4.     Spoon vegetables and butter over corn bread crumbs.
5.     Beat egg yolks in a medium-sized bowl;
6.     Stir in stock and pour mixture over corn bread. Stir lightly to blend.
7.     Season with salt and pepper to taste.

Christmas Pie Recipe - Sugar-Crusted Apple Pie

Sugar-Crusted Apple Pie

Delectable old-fashioned pie generously filled with juicy, cinnamon-flavored apple  slices.
 
Makes : 2 pies (8 servings each).

 

Pastry Ingredients:
4 cups all-purpose flour
1 teaspoon salt
1 cup cold Butter
1 cup shortening
1/2 cup cold water
1 large egg, beaten
1 teaspoon apple cider vinegar or white vinegar

Filling Ingredients:
12 cups (4 pounds) tart cooking apples, peeled, cored, sliced 1/4-inch
2 1/4 cups granulated sugar
2 tablespoons all-purpose flour
3 teaspoons ground cinnamon
6 tablespoons Butter, cut into pieces.
Directions :
1.     Combine 4 cups flour and salt in large bowl;
2.     Cut in 1 cup butter and shortening until mixture resembles coarse crumbs.
3.     Combine cold water, egg and vinegar in small bowl.
4.     Add egg mixture to flour mixture; mix with fork just until flour is moistened.
5.     Divide dough into fourths; shape each fourth into a ball; flatten slightly.
6.     Wrap each ball of dough in plastic food wrap; refrigerate at least 1 hour.
7.     Roll out 1 ball of dough on lightly floured surface into 12-inch circle. Fold into quarters.
8.     Place dough into 9-inch pie pan; unfold, pressing firmly against bottom and sides.
9.     Trim crust to 1/2 inch from edge of pan. Set aside.
10.   Heat oven to 350°F.
11.   Combine 6 cups apples, 1 cup sugar, 1 tablespoon flour and 1 1/2 teaspoons cinnamon in large bowl; toss to coat.
12.   Spoon apple mixture into prepared crust. Dot apple mixture with 3 tablespoons butter.
13.   Roll out second ball of dough on lightly floured surface into 12-inch circle. Fold into quarters.
14.   Place dough over filling; unfold. Trim, seal and crimp or flute edge.
15.   Cut 5 or 6 large slits in top crust. Sprinkle top of crust evenly with 2 tablespoons sugar.
16.   Cover edge of crust with 2-inch strip of aluminum foil.
17.   Bake for 45 minutes; remove aluminum foil.
18.   Continue baking for 10 to 20 minutes or until crust is lightly browned and juice begins to bubble through slits in crust.
19.   Let pie stand 20 to 30 minutes before cutting.
20.   While first pie bakes, repeat rolling and filling process to make a second pie.
21.   Seal in resealable plastic freezer bag. Freeze for up to 3 months.
22.   To bake, thaw frozen pie while oven preheats, then bake as directed above.

Christmas Recipe - Baked Ham Recipe

Baked Ham Recipe

Makes / Servings : 16-20
 
Ingredients :
1 5- to 6-pound fully cooked ham (rump half or shank portion)
24 whole cloves
2 t finely shredded orange peel
1 Cup orange juice
1/2 cup packed brown sugar
4 t cornstarch
1 1/2 t dry mustard
 
Directions :
1.     Score ham by making diagonal cuts in a diamond pattern.
2.     Stud with cloves (push the long end of the cloves into the ham).
3.     Place on a rack in the oven, in a shallow roasting pan.
4.     Add a little water to the bottom of the pan to keep the pan from warping.
5.     Bake in a 325° oven till thermometer reads 125°.
6.     For a rum, that'll be about 1 1/4 to 1 1/2 hours; for a shank, that's about 1 3/4 to 2 hours.
 
Ham Glaze Recipe :
7.     Combine orange peel and juice, brown sugar, cornstarch, and dry mustard in a medium saucepan.
8.     Cook and stir over medium heat until thickened and bubbly.
9.     Cook and stir 2 minutes more.
 
Final Preparation :
10.     Brush ham with some of the glaze.
11.     Bake 20 to 30 minutes more or till thermometer reads 135°.
12.     Let stand 15 minutes before carving. (The meat's temperature will rise 5° while standing.)
13.     Serve with remaining glaze.

Christmas Recipe - Coconet Macaroons

Coconut Macaroons
 
Ingredients :
250g desiccated coconut
250g sugar
1 teaspoon cornflour
5 egg whites
Grated rind of one lemon
Directions :
1.   Wash the lemon, then grate the rind.
2.   Whisk egg whites till very stiff.
3.   Add sugar and whisk again till stiff.
4.   Then fold in coconut, cornflour and rind.
5.   Place in spoonfuls on a flour-dusted baking tray and cook in a slow oven for 20 minutes.

Ingredients :
3/4 cup butter flavored shortening
1 1/4 cups brown sugar
1 egg
1/3 cup milk
1 1/2 teaspoons vanilla
3 cups oats, rolled (raw) quick/ old fashioned
1 cup flour all-purpose
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1 cup raisins
1 cup walnuts chopped
 
Directions :
1.   Lightly grease cookie sheet with shortening.
2.   Combine shortening, brown sugar, egg, milk, and vanilla;
3.   Beat with mixer on high speed to blend well.
4.   Combine oats, flour, baking soda, salt and cinnamon;
5.   Add to shorteing mixture and combine until just blended.
6.   Stir in raisins and nuts.
7.   Drop by rounded tablespoonfuls onto cookie sheet, 2 inches apart.
8.   Bake at 375 for 10-13 min., or until lightly browned.
9.   Cool 2 min. on cooling rack.

Christmas Side Dish Recipe - Buttermilk Mashed Sweet Potatoes

Buttermilk Mashed Sweet Potatoes

Makes : 8 servings
 
Ingredients :
2 pounds sweet potatoes (about 6 medium)
1/2 teaspoon grated orange zest
3/4 cup buttermilk, room temperature or slightly warmed
3 tablespoons butter, room temperature
1 tablespoon packed brown sugar
Salt and pepper to taste
 
Directions :
1.   Peel sweet potatoes and cut into chunks.
2.   Steam over boiling water until tender, 20 to 25 minutes. (Or, pierce unpeeled potatoes with fork and microwave on high (100% power) 12 to 14 minutes, turning over halfway through, let cool and peel.)
3.   Transfer sweet potatoes to mixing bowl and mash, blending in orange zest, buttermilk, butter and brown sugar.
4.   Transfer to serving dish. Can be made ahead, refrigerated and reheated in microwave.
5.   Variation: Substitute lemon zest for orange zest. Add ground cinnamon or nutmeg to taste.

Christmas Recipe - Cheese Truffles

Holiday Cheese Truffles
 
Total Time: 4 hr 15 min
Makes: 24 servings, 2 truffles and 5 crackers each
Ingredients :
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
1 tsp. garlic powder
Dash ground red pepper
1/4 cup chopped roasted red pepper s
1/4 cup chopped green onion s
1-2/3 cups PLANTERS Chopped Pecans
SOCIABLES Savory Crackers
Directions :

1.   BEAT cream cheese, shredded cheese, garlic powder and ground red pepper until well blended. Divide in half.

2.   Add roasted red peppers to one half and green onions to the other half; mix each half until well blended. Cover.

3.   REFRIGERATE several hours or until chilled.

4.   SHAPE each cheese mixture into 24 balls, each about 1 inch in diameter. Roll in pecans. Cover and refrigerate until ready to serve.

Chrstimas Recipe from New Zealand - Cheese Scones

Christmas Cheese Scones from New Zealand
 
Ingredients :
2 cups flour
2 teaspoons baking powder
2 oz butter
1/2 teaspoon salt, pinch of cayenne pepper
3 oz. grated cheese
milk to mix to a fairly firm dough

Directions :
1.   Mix together flour, baking powder, salt and pepper
2.   Cut in the butter: add milk and mix just enough to incorporate.
3.   On a floured board, roll our to 1/2 inch thick.
4.   Cut into rounds and place on greased cookie sheet.
5.   Brush tops with milk and sprinkle with some more grated cheese.
6.   Cook at 400 farenheit for 10 minutes.
7.   Cool on a wire tray under cloth

Christmas Recipe - Mexican Cookies

Mexican Christmas Cookies

Serving : Makes 4 dozen cookies.

Ingredients :
1/2 c. sugar
1 cup butter or margarine, softened
Confectioner's sugar
1 tsp. vanilla
1/4 tsp. salt
2 cup flour

Directions :
1.   In medium bowl cream butter, sugar, vanilla and salt until fluffy.
2.   Stir in flour until well blended. Chill 30 minutes or until firm enough to handle.
3.   Shape into 1 inch balls. Place 1 inch apart on ungreased cookie sheet.
4.   Bake in 375 degree oven 12 to 15 minutes or until light golden in color.
5.   Remove to rack (close together) and while still warm, dust heavily with confectioner's sugar; cool.
6.   Store airtight in cool, dry place.
7.   Before serving, dust cookies with additional confectioner's sugar.

Ingredients :
1 (6-pound) turkey breast
1/2 cup vegetable oil
1/2 cup soy sauce
2 tablespoons honey
1 1/2 teaspoons ground ginger
1 1/2 teaspoons dry mustard
2 garlic cloves, crushed
Directions :
1.   Cut a turkey into serving pieces.
2.   In a small bowl combine together oil, soy sauce, honey, ginger, dry mustard, and crushed garlic cloves.
3.   Marinate the turkey for 2 hours in the refrigerator. Drain, reserving the marinade.
4.   Grill 6 to 8-inch above medium-hot coals for 30 minutes, or until done, turning occasionally.
5.   Baste with the marinade while grilling.

Christmas Cake Recipe - Cheese Cake

Christmas Cheese Cake

Ingredients :
2 packages lady fingers
3 (8 ounce) packages cream cheese
1 cup white sugar
4 eggs
1 1/2 pints sour cream
1 tablespoon vanilla extract
1 tablespoon almond extract
1 (20 ounce) can cherry pie filling or other flavor

Directions :
1.     Preheat oven to 375 degrees F (190 degrees C).
2.     Line the sides of one 10 inch springform pan with lady fingers then line the bottom
        with lady fingers (cutting lady fingers, if necessary).
3.     Cream the cream cheese and sugar together.
4.     Add the eggs, one at a time, beating after each addition.
5.     Stir in the extracts and fold in the sour cream.
6.     Pour batter into the prepared pan.
7.     Cover tops of lady fingers with foil.
8.     Bake at 375 degrees F (190 degrees C) for 50 to 60 minutes, until almost set in the
        middle.
9.     Remove cake from oven and let stand for 1/2 hour, then remove sides of pan.
10.   Place in the refrigerator for at least 24 hours.
11.   Before serving top with canned pie filling.

Christmas Drink Recipe - Sangria

Sangria

Originating in Spain, this wine and fruit drink grew in popularity after being served in the Spanish Pavilion at the 1964 New York World's Fair.

Makes about 2 quarts or 10 6-ounce servings.
Preparation time : 20 minutes.
Chilling time : 1 hour.
 
Ingredients :
2 bottles (750 ml. each) dry red wine (with or without alcohol, chilled)
2 cups fresh orange juice (chilled)
1/4 cup superfine sugar
4 large peaches (2 pounds, peeled and thinly sliced)
2 medium-size, unpeeled oranges (thinly sliced)
1 large unpeeled lemon (thinly sliced)
1 cup club soda (chilled)
2 tablespoons Spanish brandy (optional)
 
Directions :
1.   In a large pitcher, stir together the wine, juice, sugar, peaches, oranges, and lemon.
2.   Cover and refrigerate for at least 1 hour or overnight.
3.   To serve, stir in the club soda, plus the brandy if you wish.
4.   Pour into tall glasses filled with ice.

Christmas Soup Recipe - Spiced Carrot & Orange Soup

SPICED CARROT AND ORANGE SOUP

Makes : 8 to 10 servings

A warming soup with the cheering color of carrots and the zesty flavor of citrus.
Ingredients :
2 pounds carrots, thinly sliced
2 tablespoons unrefined peanut oil or other fragrant nut oil
2 cups chopped onions
2 large celery stalks, diced
4 cups water
1 ½ cups fresh orange juice
1/4 cup dry white wine
1 teaspoon each: ground cumin, coriander, ginger
½ teaspoon ground nutmeg
1 cup soymilk, or as needed
salt and freshly ground pepper to taste
3 tablespoons minced fresh parsley
3 tablespoons finely minced scallion

Method :
1.     Reserve and set aside about ½ pound of the carrots.
2.     Heat the oil in a large soup pot.
3.     Add the onions and celery and sautee over moderate heat, stirring frequently, until golden.
4.     Add the carrots (except for the reserved batch), water, juice, wine, and spices.
5.     Bring to a boil, then cover and simmer over moderate heat until the vegetables are quite tender, about 30 minutes.
6.     Transfer in batches to the container of a food processor or blender and puree until quite smooth.
7.     Return to low heat and stir in enough soymilk to give the soup a medium-thick consistency.
8.     Season to taste with salt and pepper. Let the soup stand off the heat for several hours before serving.
9.     Just before serving, steam the reserved carrots until crisp-tender and stir into the soup along with the parsley and scallion.
10.   Taste to correct consistency and seasonings before serving.

Christmas Dessert Recipe - Cream Cheese Apple Tart

Cream Cheese Apple Tart

Ingredients :

CRUST:
1 cup (140 grams) all-purpose flour
1/3 cup (35 grams) confectioners (powdered or icing) sugar 
1/2 cup (1 stick) (113 grams) cold unsalted butter, cut into small pieces

FILLING:
One 8-ounce (227 grams) cream cheese, at room temperature
1/4 cup (50 grams) granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract

TOPPING:
1/4 cup (50 grams) granulated white sugar
1/2 teaspoon (2 grams) ground cinnamon
4 cups (500 ml) Granny Smith apples, peeled and cut into 1/4 inch (.6 cm) slices (about 3-4 large apples)
1/3 cup (35 grams) sliced almonds
 
Method :

1.   Preheat oven to 450 degrees F (230 degrees C) and place rack in center of oven. 
2.   Grease (or spray with Pam) a 9 inch (22 cm) springform pan.

CRUST: 
1.   In the bowl of your food processor place the flour and sugar. 
2.   Pulse to blend together. 
3.   Add butter and pulse until dough just begins to come together. 
4.   Pat the dough onto the bottom and one inch (2.5 cm) up the sides of the pan. 
5.   Cover with plastic wrap and place in refrigerator while you make the filling.

FILLING: 
1.   In a food processor process the cream cheese until smooth. 
2.   Add the sugar and mix well. 
3.   Blend in the egg and vanilla extract and process until smooth. 
4.   Remove the crust from the fridge and pour in the filling. 
5.   Return to refrigerator while you prepare the topping.

TOPPING: 
1.   Combine the sugar and cinnamon in a large bowl. 
2.   Toss the sliced apples in the sugar mixture. 
3.   Spoon the apples evenly over the cream cheese layer and sprinkle with almonds. 
4.   Place the springform pan on a larger baking sheet to catch the drips. 

1.   Bake at 450 degrees F (230 degrees C) for 10 minutes. 
2.   Reduce heat to 400 degrees F (205 degrees C) and bake for 25 to 30 minutes until golden brown (apples are soft when pierced with a fork), and filling is almost set.  
3.   Remove from oven and place on wire rack to cool. 
4.   Sprinkle with confectioners sugar and serve at room temperature. 
5.   Leftovers can be covered with plastic wrap and refrigerated.

Tip : This is one dessert that should be eaten shortly after it is baked; when the crust is at its best, beautifully crisp and crumbly, the filling is soft and creamy, and the apples are juicy and flavorful.

Christmas Recipe - Choclate Fudge

Chocolate Fudge

Serves / Makes : 4 pounds
 
Ingredients :
3cups Semisweet chocolate pieces
2cups chopped nuts
1tablespoon vanilla
1/2pound butter
41/2cups sugar
1(13oz.)can evaporated milk
salt
 
Method :
1.     Combine sugar,milk, and dash salt in a large saucepan.
2.     Boil over medium heat for 14 minutes, timing after mixture comes to full boil.
3.     Stir occacionally.
4.     While syrup is cooking, place butter, chocolate pieces, and a dash of salt in large mixing
         bowl.
5.     After syrup is cooked, pour over the chocolate butter mixture in bowl and blend at low
         speed first, then at high speed for 10 min.
6.     Add nuts and vanilla and stir to blend.
7.     Pour fudge into greased 13x9" pan.
8.     Chill untill firm.

Christmas Recipe - Brunch Casserole

Christmas Brunch Casserole

Serves / Makes : 10

Ingredients :
1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cup milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Method :
1. Preheat oven to 400 degrees F.
2. Grease a 9x13 inch casserole dish.
3. Place bacon in a large, deep skillet.
4. Cook over medium high heat until evenly brown. Drain and set aside.
5. In a separate skillet, melt the butter and fry onions and mushrooms until tender.
6. Place potatoes in bottom of prepared dish.
7. Sprinkle with salt, garlic salt, and pepper.
8. Top with bacon, then onions and mushrooms.
9. In a large bowl, beat eggs with milk and parsley. Pour over casserole.
10. Top with grated cheese. Cover and refrigerate overnight.
11. Bake in preheated oven for 1 hr or until set.
12. If preparing and baking the same day, cook for 45 minutes.

Christmas Morning Sausage Ring

Serves / Makes : 8

Ingredients :
2 pounds sausage
1 1/2 cup crackers
8 eggs, divided
1/2 cup milk
1/4 cup onion
1 cup apple

Directions :

1. In a bowl, combine sausage, crushed crackers, 2 eggs, milk, finely chopped onion and finely chopped

apple. Mix Well.

2. Place into a greased ring mold and unmold ontto a baking sheet.

3. Bake at 325 degress for 1 hour.

Christmas Recipes - Red Cabbage Slaw

Red Cabbage Slaw

Serves : 6 -8

Ingredients :
4 cups red cabbage shredded
1/2 teaspoon black pepper
1/2 cup chopped green onions
1/4 cup salad oil
1 green pepper, chopped
1/4 cup lemon juice
1 teaspoon salt
2 teaspoons sugar
2 tablespoons minced parsley

Method :
1. Combine and toss the vegetables together.
2. Mix salt, peper, salad oil, lemon juice, sugar and parsley and pour over vegetable mixture.
3. Refrigerate.
4. Toss briskly before serving.
